Stewed Beef Rump With Onions

  • 1 rump of beef, bones removed
  • 1 pint white wine
  • Good broth
  • 1 slice veal
  • 2 slices bacon or ham
  • Large bunch kitchen herbs
  • Pepper and salt
  • Good quantity onions

Method

  1. 1 Tie the boneless beef compactly into a neat shape.
  2. 2 Place beef in a heavy pan with white wine, broth, veal slice, bacon or ham, herbs, pepper, and salt.
  3. 3 Stew slowly until beef is nearly half done, then add the onions.
  4. 4 Cook until thoroughly done, remove beef, and wipe off excess grease.
  5. 5 Place beef in serving dish, arrange onions around it, and pour your preferred sauce over the top.
