Stewed Beef And Root Vegetable Soup
Ingredients
- 1.5 lbs beef brisket (fat part)
- 4 lbs stewing beef, cut into pieces
- Salt and pepper to taste
- 1 bunch sweet herbs
- 1 onion, studded with cloves
- 2-3 carrots, cut into pieces
- 2 quarts water
- 0.5 pint small beer
- Turnips, cut into pieces
- 1 small leek
- 2-3 heads celery, cut small
- 1 piece bread, toasted hard
Method
- 1 Place beef, brisket, salt, pepper, sweet herbs, clove-studded onion, carrots, water, and beer into a large stewpan.
- 2 Stew the mixture for 4 hours until the beef is tender.
- 3 Add turnips, carrots, leek, celery, and toasted bread to the pot.
- 4 Continue stewing for 1 hour longer, then transfer to a serving dish.
