Stewed Beef And Root Vegetable Soup

Ingredients

  • 1.5 lbs beef brisket (fat part)
  • 4 lbs stewing beef, cut into pieces
  • Salt and pepper to taste
  • 1 bunch sweet herbs
  • 1 onion, studded with cloves
  • 2-3 carrots, cut into pieces
  • 2 quarts water
  • 0.5 pint small beer
  • Turnips, cut into pieces
  • 1 small leek
  • 2-3 heads celery, cut small
  • 1 piece bread, toasted hard

Method

  1. 1 Place beef, brisket, salt, pepper, sweet herbs, clove-studded onion, carrots, water, and beer into a large stewpan.
  2. 2 Stew the mixture for 4 hours until the beef is tender.
  3. 3 Add turnips, carrots, leek, celery, and toasted bread to the pot.
  4. 4 Continue stewing for 1 hour longer, then transfer to a serving dish.
