Steamed Whole Wheat Golden Syrup Pudding

Ingredients

  • 10 oz whole wheat flour
  • 3 eggs
  • 1 pint milk
  • 1/2 lb golden syrup
  • butter for greasing
  • buttered paper and cloth for steaming

Method

  1. 1 Grease a pudding basin and pour the golden syrup into the bottom.
  2. 2 Whisk the milk, flour, and eggs together to form a smooth batter.
  3. 3 Pour the batter carefully over the syrup in the basin without stirring.
  4. 4 Cover the basin with buttered paper and a cloth (or metal lid), then steam in boiling water for 2.5 hours.
  5. 5 Briefly dip the basin in cold water to loosen, then invert onto a plate to serve.
