Steamed Wheatmeal Pudding With Lemon
Ingredients
- 10 oz Allinson fine wheatmeal
- 3 eggs
- 1 pint milk
- 1/2 lb golden syrup
- Butter for greasing
- Buttered paper
- Juice of 1/2 lemon (optional)
- Grated rind of 1/2 lemon (optional)
Method
- 1 Grease a pudding basin with butter.
- 2 Pour golden syrup into the bottom of the basin.
- 3 Mix wheatmeal, eggs, and milk to form a smooth batter.
- 4 Pour the batter over the syrup without mixing.
- 5 Cover with buttered paper and tie securely with a cloth.
- 6 Steam in boiling water for 2.5 hours, ensuring no water enters the basin.
- 7 Optional: Add lemon juice to syrup and rind to batter.
- 8 Dip basin in cold water for 1 minute before turning out.
