  • 10 oz Allinson fine wheatmeal
  • 3 eggs
  • 1 pint milk
  • 1/2 lb golden syrup
  • Butter for greasing
  • Buttered paper
  • Juice of 1/2 lemon (optional)
  • Grated rind of 1/2 lemon (optional)

Method

  1. 1 Grease a pudding basin with butter.
  2. 2 Pour golden syrup into the bottom of the basin.
  3. 3 Mix wheatmeal, eggs, and milk to form a smooth batter.
  4. 4 Pour the batter over the syrup without mixing.
  5. 5 Cover with buttered paper and tie securely with a cloth.
  6. 6 Steam in boiling water for 2.5 hours, ensuring no water enters the basin.
  7. 7 Optional: Add lemon juice to syrup and rind to batter.
  8. 8 Dip basin in cold water for 1 minute before turning out.
