Steamed Vermicelli Pudding

Ingredients

  • 1 pint milk
  • Lemon peel
  • Cinnamon
  • Loaf sugar to taste
  • ¼ pound vermicelli
  • 5 egg yolks
  • 3 egg whites

Method

  1. 1 Boil milk with lemon peel and cinnamon. Sweeten with sugar, then strain through a sieve.
  2. 2 Add vermicelli to the hot milk and boil for 10 minutes.
  3. 3 Remove from heat and mix in egg yolks and whites until well combined.
  4. 4 Steam for 1 hour and 15 minutes, or bake at 350°F for 30 minutes.
