Steamed Vanilla Pudding With Pineapple Sauce
Ingredients
- 1 vanilla bean
- ½ lb sugar
- 3 eggs, separated
- 1 pint cream
- 1 breakfast cupful pineapple juice
- Juice of 1 lemon
- 1 tbsp arrowroot
- Butter and oiled paper for mold
Method
- 1 Place vanilla bean and sugar in a mortar; pound well and sift to combine.
- 2 Beat egg yolks, then stir in cream and vanilla sugar until mixed.
- 3 Whisk egg whites to stiff peaks and gently fold into the cream mixture.
- 4 Butter a pudding mold, pour in mixture, cover with oiled paper, and steam in boiling water for 30 minutes.
- 5 While pudding steams, boil pineapple juice and lemon juice, then stir in arrowroot until thickened.
- 6 Turn pudding onto a dish, strain hot sauce over it, and serve immediately.
