Steamed Vanilla Pudding With Pineapple Sauce

Ingredients

  • 1 vanilla bean
  • ½ lb sugar
  • 3 eggs, separated
  • 1 pint cream
  • 1 breakfast cupful pineapple juice
  • Juice of 1 lemon
  • 1 tbsp arrowroot
  • Butter and oiled paper for mold

Method

  1. 1 Place vanilla bean and sugar in a mortar; pound well and sift to combine.
  2. 2 Beat egg yolks, then stir in cream and vanilla sugar until mixed.
  3. 3 Whisk egg whites to stiff peaks and gently fold into the cream mixture.
  4. 4 Butter a pudding mold, pour in mixture, cover with oiled paper, and steam in boiling water for 30 minutes.
  5. 5 While pudding steams, boil pineapple juice and lemon juice, then stir in arrowroot until thickened.
  6. 6 Turn pudding onto a dish, strain hot sauce over it, and serve immediately.
