Steamed Tomato Eggs On Toast

Ingredients

  • 2 eggs
  • 4 tablespoons tomato juice, strained
  • Salt and pepper to taste
  • Butter for greasing cups
  • Buttered Allinson wholemeal toast for serving

Method

  1. 1 Preheat a saucepan with boiling water. Butter individual cups.
  2. 2 Beat the eggs and mix with the strained tomato juice. Season with salt and pepper.
  3. 3 Divide the mixture into the buttered cups. Cover each with buttered paper.
  4. 4 Place cups in the saucepan with boiling water and steam for 10 minutes.
  5. 5 Serve the steamed eggs on buttered wholemeal toast.
