Steamed Tomato Eggs On Toast
Ingredients
- 2 eggs
- 4 tablespoons tomato juice, strained
- Salt and pepper to taste
- Butter for greasing cups
- Buttered Allinson wholemeal toast for serving
Method
- 1 Preheat a saucepan with boiling water. Butter individual cups.
- 2 Beat the eggs and mix with the strained tomato juice. Season with salt and pepper.
- 3 Divide the mixture into the buttered cups. Cover each with buttered paper.
- 4 Place cups in the saucepan with boiling water and steam for 10 minutes.
- 5 Serve the steamed eggs on buttered wholemeal toast.
