Steamed Spiced Oatmeal Pudding With Dates
Ingredients
- 1 quart whole oatmeal
- Warm milk (enough to steep)
- 3 pints cream
- 6 egg yolks
- 3 egg whites
- Cloves
- Mace
- Saffron
- Salt
- Sliced dates
- Sugar
- Butter (for serving)
- Raisins (optional)
- Sweet herbs (optional)
Method
- 1 Pick and cleanse the oatmeal, then steep it in warm milk overnight.
- 2 Drain the oatmeal and boil it in the cream until tender.
- 3 Let the mixture cool, then stir in the egg yolks, egg whites, spices, dates, and sugar.
- 4 Boil the mixture in a buttered napkin for about an hour, or bake in a dish at 350°F.
- 5 Serve with beaten butter, sliced dates, and grated sugar.
