Steamed Semolina Custard Pudding

Ingredients

  • 3 oz semolina
  • 1 pint milk
  • 2 eggs
  • 2 oz moist sugar
  • flavoring essence

Method

  1. 1 Boil semolina, milk, and sugar together until quite soft.
  2. 2 Remove from heat and stir in flavoring essence and egg yolks.
  3. 3 Beat egg whites until stiff and gently fold them into the mixture.
  4. 4 Pour into a greased pudding mold and steam for one hour.
