Steamed Rhubarb Pudding With Sauce
Ingredients
- 1 cup finely chopped rhubarb
- 1 cup sugar
- 2 tablespoons butter
- 1 teaspoon baking powder
- ¼ cup milk
- 2 eggs
- flour, as needed to make a thick batter
- ½ cup butter (for sauce)
- ½ cup powdered sugar (for sauce)
- 1 egg (for sauce)
- 3 tablespoons boiling water (for sauce)
Method
- 1 Cream 2 tablespoons butter and 1 cup sugar. Add 2 well-beaten eggs, ¼ cup milk, 1 teaspoon baking powder, 1 cup chopped rhubarb, and enough flour to make a thick batter.
- 2 Grease cups, fill them halfway with the batter, and steam for 30 minutes.
- 3 For the sauce, cream ½ cup butter and ½ cup powdered sugar. Beat in 1 egg until smooth, then stir in 3 tablespoons boiling water.
