Steamed Molasses Cornbread

Ingredients

  • 1 pint cornmeal
  • 1 tablespoon salt
  • 1 cup molasses
  • 2 teaspoons baking soda
  • 1 pint buttermilk
  • Graham flour, as needed

Method

  1. 1 Scald the cornmeal with a little water.
  2. 2 Dissolve half the baking soda in the molasses and the rest in the buttermilk.
  3. 3 Mix the cornmeal, molasses mixture, buttermilk, and salt together.
  4. 4 Stiffen the batter with Graham flour.
  5. 5 Steam the mixture for four hours.
  6. 6 Brown in a 350°F oven for about 15 minutes.
