Steamed Molasses Cornbread
Ingredients
- 1 pint cornmeal
- 1 tablespoon salt
- 1 cup molasses
- 2 teaspoons baking soda
- 1 pint buttermilk
- Graham flour, as needed
Method
- 1 Scald the cornmeal with a little water.
- 2 Dissolve half the baking soda in the molasses and the rest in the buttermilk.
- 3 Mix the cornmeal, molasses mixture, buttermilk, and salt together.
- 4 Stiffen the batter with Graham flour.
- 5 Steam the mixture for four hours.
- 6 Brown in a 350°F oven for about 15 minutes.
