Steamed Lemon Sago Pudding

Ingredients

  • 1 lb breadcrumbs
  • 3 eggs
  • 3 lemons
  • 2 oz sago
  • 1 pint milk
  • 2 oz butter
  • 8 oz sugar

Method

  1. 1 Soak sago in milk over heat until thickened.
  2. 2 Stir in butter until dissolved.
  3. 3 Mix in breadcrumbs, sugar, lemon juice, and grated rind.
  4. 4 Beat eggs and combine with the mixture.
  5. 5 Pour into greased pudding basins and steam for 2 hours.
