Steamed Lemon Brown Bread Pudding
Ingredients
- 1 loaf brown bread
- ½ cup double cream
- 1 lemon, zested
- 3 oz castor sugar
- ½ cup milk
- 4 eggs
- A few drops vanilla extract
Method
- 1 Remove crusts from the bread and rub the crumb through a wire sieve.
- 2 Place 5 ounces of breadcrumbs in a basin with the sugar and grated lemon rind.
- 3 Boil the milk, pour it over the crumbs, and stir in the vanilla essence.
- 4 Whip the cream to stiff peaks and mix it into the pudding along with the egg yolks.
- 5 Beat the whites of two eggs to stiff peaks and gently fold them into the mixture.
- 6 Pour the mixture into a well-greased mold and steam for 1 hour and 30 minutes.
