Steamed Lemon Brown Bread Pudding

Ingredients

  • 1 loaf brown bread
  • ½ cup double cream
  • 1 lemon, zested
  • 3 oz castor sugar
  • ½ cup milk
  • 4 eggs
  • A few drops vanilla extract

Method

  1. 1 Remove crusts from the bread and rub the crumb through a wire sieve.
  2. 2 Place 5 ounces of breadcrumbs in a basin with the sugar and grated lemon rind.
  3. 3 Boil the milk, pour it over the crumbs, and stir in the vanilla essence.
  4. 4 Whip the cream to stiff peaks and mix it into the pudding along with the egg yolks.
  5. 5 Beat the whites of two eggs to stiff peaks and gently fold them into the mixture.
  6. 6 Pour the mixture into a well-greased mold and steam for 1 hour and 30 minutes.
