Steamed Jam Pudding With Cream Meringue

Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup jam
  • 1 teaspoon baking soda
  • 3 tablespoons sour milk
  • Cinnamon and nutmeg to taste
  • 3 egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream

Method

  1. 1 Preheat a large pot with a steamer insert. Beat 3 eggs, 1 cup sugar, 1 cup flour, and 1 cup jam until smooth.
  2. 2 Dissolve 1 teaspoon baking soda in 3 tablespoons sour milk. Stir into the batter along with cinnamon and nutmeg.
  3. 3 Pour batter into a greased cake pan. Place in the steamer over boiling water and steam for 3 hours.
  4. 4 While pudding steams, beat 3 egg whites with 1 cup sugar until stiff peaks form. Fold in 1 teaspoon vanilla.
  5. 5 Just before serving, gently fold 1 cup well-beaten heavy cream into the meringue mixture. Serve warm.
