Steamed Huckleberry Roll Pudding
Ingredients
- 1 ½ cups flour
- ½ teaspoon salt
- 3 teaspoons baking powder
- 4 tablespoons sugar
- 4 tablespoons shortening
- 2/3 cup water
- Huckleberries
- Brown sugar
- Fruit sauce (optional)
Method
- 1 Sift together flour, salt, baking powder, and sugar in a mixing bowl.
- 2 Rub in shortening and mix with water to form a dough.
- 3 Roll dough to ½-inch thickness, spread with huckleberries, and sprinkle with brown sugar.
- 4 Roll up like a jelly roll, tie securely in a cloth, and steam in boiling water for one hour.
- 5 Serve with fruit sauce made from drained berry juice if desired.
