Steamed Graham Molasses Pudding With Raisins
Ingredients
- 2 cups graham flour
- 1 cup milk
- 1 cup Porto Rico molasses
- 1 cup raisins, stoned and slightly chopped
- 1 egg
- 1 level teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- Nutmeg, to taste
- 1 pinch salt
- White flour, for dusting raisins
- Butter, for greasing mold
- 1 egg, beaten with milk (for frying leftover slices)
- Butter, for frying
Method
- 1 Dust the chopped raisins with a little white flour to prevent them from sticking.
- 2 Mix graham flour, milk, molasses, raisins, egg, soda, cinnamon, cloves, nutmeg, and salt thoroughly.
- 3 Butter a pudding mold, pour in the batter, and steam for 3 hours.
- 4 Serve warm with your favorite sauce.
- 5 To reuse leftovers: slice pudding, dip in milk beaten with an egg, and fry in butter until brown.
