Steamed Ginger Molasses Pudding With Lemon Sauce

Ingredients

  • 2 cups flour
  • 2 teaspoons powdered ginger
  • 1/2 teaspoon baking soda
  • 1/2 cup Crisco
  • 1/2 cup molasses
  • 1 egg
  • 1 tablespoon breadcrumbs
  • 3/4 cup milk
  • 1/2 teaspoon salt
  • 1 teaspoon Crisco (for sauce)
  • 1 teaspoon cornstarch (for sauce)
  • 2 tablespoons lemon juice (for sauce)
  • 3 tablespoons molasses (for sauce)
  • 1 cup hot water (for sauce)

Method

  1. 1 Mix flour, breadcrumbs, soda, and ginger. Rub in 1/2 cup Crisco with fingertips.
  2. 2 Beat egg, add milk, molasses, and salt. Stir into dry ingredients until combined.
  3. 3 Pour mixture into a greased mold, cover with greased paper, and steam for 2 hours.
  4. 4 For sauce, blend 1 tsp Crisco and cornstarch. Add molasses, water, and lemon juice; boil a few minutes.
  5. 5 Turn pudding out onto plate and serve with the warm sauce.
