Steamed Ginger Molasses Pudding With Lemon Sauce
Ingredients
- 2 cups flour
- 2 teaspoons powdered ginger
- 1/2 teaspoon baking soda
- 1/2 cup Crisco
- 1/2 cup molasses
- 1 egg
- 1 tablespoon breadcrumbs
- 3/4 cup milk
- 1/2 teaspoon salt
- 1 teaspoon Crisco (for sauce)
- 1 teaspoon cornstarch (for sauce)
- 2 tablespoons lemon juice (for sauce)
- 3 tablespoons molasses (for sauce)
- 1 cup hot water (for sauce)
Method
- 1 Mix flour, breadcrumbs, soda, and ginger. Rub in 1/2 cup Crisco with fingertips.
- 2 Beat egg, add milk, molasses, and salt. Stir into dry ingredients until combined.
- 3 Pour mixture into a greased mold, cover with greased paper, and steam for 2 hours.
- 4 For sauce, blend 1 tsp Crisco and cornstarch. Add molasses, water, and lemon juice; boil a few minutes.
- 5 Turn pudding out onto plate and serve with the warm sauce.
