Steamed Ginger Coconut Cake
Ingredients
- 1 cup stale cake crumbs
- 1 cup freshly grated coconut
- 2 cups hot sweetened cream
- 4 eggs, well-beaten
- Thin slices of preserved ginger
- Syrup from preserved ginger
Method
- 1 Mix cake crumbs and coconut in a bowl.
- 2 Pour hot sweetened cream over the mixture and let stand until crumbs are soft.
- 3 Stir in beaten eggs.
- 4 Line a buttered mold with thin slices of preserved ginger.
- 5 Pour the mixture into the mold and steam for two hours.
- 6 Serve with the syrup drained from the ginger.
