Steamed Ginger Coconut Cake

Ingredients

  • 1 cup stale cake crumbs
  • 1 cup freshly grated coconut
  • 2 cups hot sweetened cream
  • 4 eggs, well-beaten
  • Thin slices of preserved ginger
  • Syrup from preserved ginger

Method

  1. 1 Mix cake crumbs and coconut in a bowl.
  2. 2 Pour hot sweetened cream over the mixture and let stand until crumbs are soft.
  3. 3 Stir in beaten eggs.
  4. 4 Line a buttered mold with thin slices of preserved ginger.
  5. 5 Pour the mixture into the mold and steam for two hours.
  6. 6 Serve with the syrup drained from the ginger.
