Steamed Fruit Pudding With Brandy
Ingredients
- 1 cup milk
- 2 blades mace
- 1 strip lemon peel
- 3 large eggs
- 3 oz granulated sugar
- 1/4 nutmeg, grated
- 3 oz all-purpose flour
- 3 oz unsalted butter, cut into small pieces
- 3 oz breadcrumbs
- 3 oz currants, washed and picked
- 3 oz raisins, stoned and chopped
- 2 tbsp brandy
- Additional sugar for serving
- Melted butter for serving
Method
- 1 Simmer milk, mace, and lemon peel for 10 minutes. Strain into a bowl and let cool completely.
- 2 Beat eggs, sugar, and nutmeg in a separate bowl. Add flour and mix well.
- 3 Gradually stir in the cooled milk. Add butter, breadcrumbs, currants, and raisins. Mix thoroughly.
- 4 Pour batter into a buttered pudding mold. Cover tightly with a cloth and secure.
- 5 Boil the pudding in water for 2.5 hours. Remove, unmold, and serve with melted butter, brandy, and sugar.
