Steamed Fruit Pudding With Brandy

Ingredients

  • 1 cup milk
  • 2 blades mace
  • 1 strip lemon peel
  • 3 large eggs
  • 3 oz granulated sugar
  • 1/4 nutmeg, grated
  • 3 oz all-purpose flour
  • 3 oz unsalted butter, cut into small pieces
  • 3 oz breadcrumbs
  • 3 oz currants, washed and picked
  • 3 oz raisins, stoned and chopped
  • 2 tbsp brandy
  • Additional sugar for serving
  • Melted butter for serving

Method

  1. 1 Simmer milk, mace, and lemon peel for 10 minutes. Strain into a bowl and let cool completely.
  2. 2 Beat eggs, sugar, and nutmeg in a separate bowl. Add flour and mix well.
  3. 3 Gradually stir in the cooled milk. Add butter, breadcrumbs, currants, and raisins. Mix thoroughly.
  4. 4 Pour batter into a buttered pudding mold. Cover tightly with a cloth and secure.
  5. 5 Boil the pudding in water for 2.5 hours. Remove, unmold, and serve with melted butter, brandy, and sugar.
