Steamed Custard Eggs With Jam

Ingredients

  • 2 tablespoons cream or new milk per egg
  • 1 teaspoon strawberry, raspberry, or currant jam per egg
  • 1 thin slice buttered toast per egg
  • Sugar to taste
  • Vanilla to taste

Method

  1. 1 Butter individual cups, using one cup per egg.
  2. 2 Place jam in the center of each cup.
  3. 3 Beat eggs with cream (or milk), sugar, and vanilla, then divide the mixture into the cups.
  4. 4 Cover each cup with buttered paper and place in a stew-pan with boiling water reaching halfway up the sides.
  5. 5 Steam for 8 to 10 minutes until set.
  6. 6 Turn eggs out onto buttered toast and serve hot or cold.
