Steamed Cornmeal Meat Rolls
Ingredients
- 1 lb beef, mutton, or chicken, cut into bits
- 2 tbsp butter or Crisco (if meat is lean)
- 1 cup tomato sauce or boiled/strained tomatoes
- Salt and pepper to taste
- Cornmeal (approx. 1 cup, or enough to thicken)
- 2 tbsp raisins (optional)
- 2 tbsp ripe olives, cut (optional)
- 2 tbsp almonds or peanuts, chopped (optional)
- Cayenne pepper to taste
- 1 tsp pimento (optional)
- Corn husks for wrapping
Method
- 1 Stew the meat with fat until very tender. Drain excess liquid if necessary.
- 2 Add tomato sauce, seasonings, and enough cornmeal to thicken the mixture like mush. Cook for a few minutes.
- 3 Transfer to a steamer and cook until the cornmeal loses its raw taste. Let cool slightly.
- 4 Stir in raisins, olives, nuts, cayenne, and pimento if using.
- 5 Mold mixture into small rolls, wrap in corn husks, and tie ends securely.
- 6 Steam the wrapped rolls until heated through. Serve hot with additional tomato sauce.
