Steamed Cobnut And Breadcrumb Pudding

Ingredients

  • 1 lb breadcrumbs
  • 6 oz ground cobnuts
  • 2 oz butter
  • 4 eggs
  • 1 small onion, chopped very fine
  • 1 pinch mixed herbs
  • Salt and pepper to taste
  • Milk, as needed

Method

  1. 1 Mix breadcrumbs, ground cobnuts, butter, eggs, chopped onion, mixed herbs, salt, and pepper thoroughly.
  2. 2 Add enough milk to smoothly moisten the mixture without making it soupy.
  3. 3 Turn the mixture into a buttered bread tin.
  4. 4 Steam for 2.5 to 3 hours.
  5. 5 Turn out onto a plate and serve with brown sauce.
