Steamed Christmas Fruit Pudding

Ingredients

  • 1 lb raisins
  • 1 lb currants
  • 1 lb sultanas
  • 1 lb chopped apples
  • 1 lb Brazil nut kernels
  • 1/2 lb moist sugar
  • 1/2 lb wholemeal breadcrumbs
  • 1/2 lb Allinson fine wheatmeal
  • 1/2 lb sweet almonds
  • 1/2 lb butter
  • 1/4 lb mixed peel
  • 1/2 oz mixed spice
  • 6 eggs
  • milk

Method

  1. 1 Wash and pick the currants and sultanas; wash and stone the raisins.
  2. 2 Chop fine the nut kernels, blanch and chop fine the almonds, and cut up fine the mixed peel.
  3. 3 Rub the butter into the meal and breadcrumbs.
  4. 4 Mix all the dry ingredients together.
  5. 5 Beat the eggs well and add them to the dry mixture.
  6. 6 Pour in enough milk to moisten the mixture sufficiently to work it with a wooden spoon.
  7. 7 Fill buttered pudding basins nearly to the top with the mixture.
  8. 8 Cover with pieces of buttered paper, tie pudding cloths over the basins, and boil for 12 hours.
