Steamed Chocolate Souffle Pudding
Ingredients
- 2 squares bitter chocolate, grated
- 4 tsp sugar
- 4 tbsp hot water
- ½ cup cream
- ¼ cup milk
- 2 egg yolks
- 2 egg whites
- Pinch of salt
- Vanilla or cinnamon to flavor
- Powdered sugar for garnish
- Whipped cream for serving
Method
- 1 Cook chocolate, sugar, and hot water into a smooth paste.
- 2 Stir in cream and milk; bring to a boil.
- 3 Add yolks beaten with a little milk; cook until thickened, stirring constantly.
- 4 Fold in stiffly beaten whites, salt, and flavoring.
- 5 Cover and let stand in a double boiler until light and spongy.
- 6 Turn into a serving dish, sprinkle with powdered sugar, and serve cold with whipped cream.
