Steamed Chocolate Custards With Ladyfingers

Ingredients

  • 2 tbsp chocolate or cocoa
  • 1 cup boiling milk
  • Sugar to taste
  • 2 egg yolks, well beaten
  • ½ cup heavy cream
  • Sponge cakes or ladyfingers for serving

Method

  1. 1 Mix chocolate or cocoa into boiling milk and sweeten to taste.
  2. 2 When nearly cold, whisk in beaten egg yolks and heavy cream until thoroughly mixed.
  3. 3 Strain mixture into china custard cups.
  4. 4 Place cups in a shallow pan with boiling water reaching halfway up the sides.
  5. 5 Steam for 20 minutes until firm, then chill on ice and serve with sponge cakes.
