Steamed Chocolate Custards With Ladyfingers
Ingredients
- 2 tbsp chocolate or cocoa
- 1 cup boiling milk
- Sugar to taste
- 2 egg yolks, well beaten
- ½ cup heavy cream
- Sponge cakes or ladyfingers for serving
Method
- 1 Mix chocolate or cocoa into boiling milk and sweeten to taste.
- 2 When nearly cold, whisk in beaten egg yolks and heavy cream until thoroughly mixed.
- 3 Strain mixture into china custard cups.
- 4 Place cups in a shallow pan with boiling water reaching halfway up the sides.
- 5 Steam for 20 minutes until firm, then chill on ice and serve with sponge cakes.
