Steamed Chicken And Cream Terrine
Ingredients
- 1 chicken breast, ground
- 2 egg whites
- 1 cup heavy cream
- ½ tsp salt
- ¼ tsp white pepper
Method
- 1 Grind the chicken breast 5-6 times until fine.
- 2 Beat in egg whites one at a time, then gradually beat in the cream.
- 3 Season with salt and white pepper.
- 4 Pour mixture into buttered molds.
- 5 Place molds in a pan with hot water to two-thirds height. Cover and cook over low heat for 20 minutes, ensuring water does not boil.
