  • 2 egg whites
  • 1 cup heavy cream
  • ½ tsp salt
  • ¼ tsp white pepper

Method

  1. 1 Grind the chicken breast 5-6 times until fine.
  2. 2 Beat in egg whites one at a time, then gradually beat in the cream.
  3. 3 Season with salt and white pepper.
  4. 4 Pour mixture into buttered molds.
  5. 5 Place molds in a pan with hot water to two-thirds height. Cover and cook over low heat for 20 minutes, ensuring water does not boil.
