Steamed Caramel Custard

Ingredients

  • 1 cup milk
  • 4 egg yolks
  • 1 egg white
  • 1 tablespoon sugar
  • 1/2 cup sugar
  • 1/2 cup water

Method

  1. 1 Brown 1/2 cup sugar in an iron pan, add 1/2 cup water, and simmer until thick syrup.
  2. 2 Line a mold with the caramel, turning rapidly from side to side.
  3. 3 Beat milk with 4 egg yolks, 1 egg white, and 1 tablespoon sugar. Strain into the caramel-lined mold.
  4. 4 Cover and steam for 30 minutes.
