  • 7 tart apples, peeled, cored, and finely chopped

  • 1 cup sugar
  • 4 egg yolks
  • 4 egg whites
  • 1 cup stale bread crumbs
  • Grated lemon peel, to taste

Method

  1. 1 Place chopped apples in a double boiler without water. Steam until tender.
  2. 2 Stir in butter and sugar. Remove from heat and transfer to a bowl to cool completely.
  3. 3 Beat in egg yolks, lemon peel, and bread crumbs until well combined.
  4. 4 Gently fold in egg whites beaten to stiff peaks. Beat mixture briefly to incorporate.
