Steamed Apple And Bread Pudding
Ingredients
- 7 tart apples, peeled, cored, and finely chopped
- 2 tablespoons butter
- 1 cup sugar
- 4 egg yolks
- 4 egg whites
- 1 cup stale bread crumbs
- Grated lemon peel, to taste
Method
- 1 Place chopped apples in a double boiler without water. Steam until tender.
- 2 Stir in butter and sugar. Remove from heat and transfer to a bowl to cool completely.
- 3 Beat in egg yolks, lemon peel, and bread crumbs until well combined.
- 4 Gently fold in egg whites beaten to stiff peaks. Beat mixture briefly to incorporate.
- 5 Pour into a buttered pudding dish. Bake at 350°F for 1 hour, covering for the first 45 minutes.
- 6 Serve warm directly from the baking dish.
