Square Cornbread
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 egg
- 1/4 cup vegetable oil
- 1 cup non-fat milk
Method
- 1 Preheat oven to 425°F. Grease an 8- or 9-inch square baking pan.
- 2 In a large bowl, whisk together cornmeal, flour, sugar, and baking powder.
- 3 In a separate small bowl, beat the egg with a fork. Add oil and milk, then whisk to combine.
- 4 Pour wet ingredients into dry ingredients and mix until just blended.
- 5 Pour batter into the prepared pan and bake for 20 to 25 minutes until golden and a toothpick comes out clean.
