Sponge Method Bread
Ingredients
- 1 quart water or half water and half milk (80°F)
- 2 yeast cakes
- 2.5 quarts flour
- 1 ounce sugar
- 1 ounce salt
- 1.5 ounces shortening
- 1.5 quarts flour
Method
- 1 Dissolve sugar and yeast in warm water. Add 2.5 quarts flour and beat to blend. Set aside to rise for 3 hours.
- 2 Add salt, shortening, and remaining 1.5 quarts flour. Work into a smooth elastic dough for about 10 minutes.
- 3 Place in a greased bowl, turning to coat with shortening. Cover and let rise for 2 hours.
- 4 Punch down the dough, turn it over, and let rise for 1 hour 15 minutes before baking.
