Split Pea Beef And Rice Soup
Ingredients
- 7 pints water
- 1 pint split peas
- 1 lb lean beef, cut into small slices
- 0.75 lb potatoes
- 3 oz ground rice
- 2 heads celery
- 2 onions or leeks
- Salt and pepper to taste
- Dried mint to taste
Method
- 1 Combine water, split peas, beef, potatoes, ground rice, celery, and onions in a large pot.
- 2 Season with salt, pepper, and dried mint.
- 3 Bring to a boil, then reduce heat and simmer slowly until the mixture reduces to 5 pints.
