Split Pea And Rice Stew
Ingredients
- 1 cup split peas
- 2 whole onions
- 1 cup rice
- Water (enough to cover ingredients by 2 inches)
- Melted butter or Crisco
- Poached or hard-boiled eggs (optional, for serving)
Method
- 1 Soak split peas in water for 3 hours. Drain.
- 2 Place soaked peas and whole onions in a pot. Add water until it is 2 inches above the peas and onions.
- 3 Stew until peas are half done. Add rice and continue cooking until rice and peas are soft and water is absorbed.
- 4 Pour melted butter or Crisco over the dish. Serve with poached or sliced hard-boiled eggs.
