Split Pea And Rice Stew

Ingredients

  • 1 cup split peas
  • 2 whole onions
  • 1 cup rice
  • Water (enough to cover ingredients by 2 inches)
  • Melted butter or Crisco
  • Poached or hard-boiled eggs (optional, for serving)

Method

  1. 1 Soak split peas in water for 3 hours. Drain.
  2. 2 Place soaked peas and whole onions in a pot. Add water until it is 2 inches above the peas and onions.
  3. 3 Stew until peas are half done. Add rice and continue cooking until rice and peas are soft and water is absorbed.
  4. 4 Pour melted butter or Crisco over the dish. Serve with poached or sliced hard-boiled eggs.
