Spinach With Lemon And Wheatmeal

Ingredients

  • 4 lbs fresh spinach
  • 1 oz butter
  • 1 tbsp Allinson fine wheatmeal
  • Salt and pepper to taste
  • Juice of 1/2 lemon
  • 1-2 hard-boiled eggs, sliced

Method

  1. 1 Wash spinach thoroughly and place in a saucepan without added water. Heat gently, stirring occasionally, until spinach releases enough water to cook without burning (about 20 minutes).
  2. 2 Strain the cooked spinach through a colander, pressing out excess liquid with a wooden spoon or plate. Set the spinach aside.
  3. 3 In the same saucepan, melt 1 oz butter over heat. Stir in 1 tbsp wheatmeal and cook for 1 minute, stirring constantly.
  4. 4 Return the spinach to the saucepan. Mix well with the butter and wheatmeal, adding some of the strained spinach liquid to moisten. Season with salt, pepper, and lemon juice. Heat through.
  5. 5 Serve the spinach topped with slices of hard-boiled eggs.
