Spinach Tomato Marinara Sauce
Ingredients
- 2 teaspoons vegetable oil
- 1/2 teaspoon garlic powder
- 3/4 cup diced carrots
- 4 cans crushed tomatoes, low sodium (14.5 oz cans)
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- 2 cups raw spinach, roughly chopped
Method
- 1 Heat oil in a large pot over medium heat. Add garlic powder and cook for 10 minutes until fragrant.
- 2 Add diced carrots and cook for 5 minutes until slightly soft.
- 3 Stir in crushed tomatoes and Italian seasoning. Bring to a boil, then reduce heat to low.
- 4 Simmer uncovered for 30 minutes. Stir in spinach and cook for 2 minutes until wilted.
- 5 Season with salt and pepper to taste. Blend if a smoother consistency is desired.
