Spinach Tomato Marinara Sauce

Ingredients

  • 2 teaspoons vegetable oil
  • 1/2 teaspoon garlic powder
  • 3/4 cup diced carrots
  • 4 cans crushed tomatoes, low sodium (14.5 oz cans)
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups raw spinach, roughly chopped

Method

  1. 1 Heat oil in a large pot over medium heat. Add garlic powder and cook for 10 minutes until fragrant.
  2. 2 Add diced carrots and cook for 5 minutes until slightly soft.
  3. 3 Stir in crushed tomatoes and Italian seasoning. Bring to a boil, then reduce heat to low.
  4. 4 Simmer uncovered for 30 minutes. Stir in spinach and cook for 2 minutes until wilted.
  5. 5 Season with salt and pepper to taste. Blend if a smoother consistency is desired.
