Spinach Salad With Apples Figs And Eggs

Ingredients

  • 2 large eggs
  • 8 cups fresh spinach
  • 1 cup apples, sliced
  • 1 cup dried figs, chopped
  • 1/2 cup croutons
  • light honey mustard or poppy seed dressing

Method

  1. 1 Place eggs in a saucepan, cover with cold water by 1 inch, and bring to a boil. Remove from heat, cover, and let stand for 12 minutes. Drain, cool in cold water for 10-15 minutes, then peel and slice.
  2. 2 While eggs cook, wash and core the apples, slicing them into bite-sized chunks. Wash and drain the spinach. Chop the dried figs into similar-sized pieces.
  3. 3 Divide the spinach evenly among four plates. Top with apple chunks, sliced eggs, chopped figs, and croutons. Drizzle with honey mustard or poppy seed dressing and serve.
