Spinach, Parsley, And Lettuce Wheatmeal Pie
Ingredients
- 1 handful parsley
- 1 handful spinach
- 1 handful mustard and cress
- 2 lettuce hearts, sliced fine
- 2 small onions
- Butter, for greasing and topping
- 3 eggs
- 1 pint milk
- 1/2 lb Allinson fine wheatmeal
- Salt and pepper to taste
Method
- 1 Chop parsley, spinach, mustard and cress, lettuce, and onions finely.
- 2 Whisk eggs, milk, and wheatmeal together to form a batter. Season with salt and pepper.
- 3 Fold the chopped vegetables into the batter and mix well.
- 4 Pour the mixture into a buttered pie dish and dot the top with bits of butter.
- 5 Bake in a moderate oven (350°F) for 1 hour and 30 minutes until set and golden.
