Spinach, Parsley, And Lettuce Wheatmeal Pie

Ingredients

  • 1 handful parsley
  • 1 handful spinach
  • 1 handful mustard and cress
  • 2 lettuce hearts, sliced fine
  • 2 small onions
  • Butter, for greasing and topping
  • 3 eggs
  • 1 pint milk
  • 1/2 lb Allinson fine wheatmeal
  • Salt and pepper to taste

Method

  1. 1 Chop parsley, spinach, mustard and cress, lettuce, and onions finely.
  2. 2 Whisk eggs, milk, and wheatmeal together to form a batter. Season with salt and pepper.
  3. 3 Fold the chopped vegetables into the batter and mix well.
  4. 4 Pour the mixture into a buttered pie dish and dot the top with bits of butter.
  5. 5 Bake in a moderate oven (350°F) for 1 hour and 30 minutes until set and golden.
