Spinach Feta Frittata

  • 2 cups spinach, finely chopped
  • 1/4 cup scallions, chopped
  • 2 teaspoons crumbled feta cheese
  • 4 eggs
  • black pepper to taste
  • vegetable oil

Method

  1. 1 Preheat oven to 350°F.
  2. 2 Whisk eggs, salt, and pepper in a bowl until combined.
  3. 3 Stir in scallions, spinach, and feta cheese.
  4. 4 Heat oil in an 8-inch ovenproof skillet over medium heat.
