Spinach And Onion Dumplings
Ingredients
- 2 lbs spinach
- 3 eggs
- 1 oz butter
- 2 onions, finely chopped
- Juice of 1/2 lemon
- Salt and pepper to taste
- Allinson fine wheatmeal (as needed)
Method
- 1 Pick and wash the spinach. Boil it with the chopped onions without added water until quite tender.
- 2 Drain the spinach and onions thoroughly, then chop the mixture finely.
- 3 In a bowl, mix the spinach mixture with beaten eggs, lemon juice, butter, salt, and pepper.
- 4 Add wheatmeal gradually until the mixture forms a soft paste.
- 5 Form the mixture into balls, lightly flour them, and drop into boiling water.
- 6 Boil for 5 to 10 minutes until cooked through. Serve with potatoes and gravy.
