Spinach And Onion Dumplings

Ingredients

  • 2 lbs spinach
  • 3 eggs
  • 1 oz butter
  • 2 onions, finely chopped
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • Allinson fine wheatmeal (as needed)

Method

  1. 1 Pick and wash the spinach. Boil it with the chopped onions without added water until quite tender.
  2. 2 Drain the spinach and onions thoroughly, then chop the mixture finely.
  3. 3 In a bowl, mix the spinach mixture with beaten eggs, lemon juice, butter, salt, and pepper.
  4. 4 Add wheatmeal gradually until the mixture forms a soft paste.
  5. 5 Form the mixture into balls, lightly flour them, and drop into boiling water.
  6. 6 Boil for 5 to 10 minutes until cooked through. Serve with potatoes and gravy.
