Spinach Anchovy Butter Sandwiches
Ingredients
- ¼ lb butter
- 1/8 peck spinach
- 2 tbsp finely chopped parsley
- 6 anchovies
- 2 tsp finely chopped capers
Method
- 1 Boil spinach, drain thoroughly, and press through a muslin cloth to extract pulp.
- 2 Beat butter until creamy, then mix in enough spinach pulp to achieve a green tint.
- 3 Wipe anchovies, remove bones, and pass through a fine sieve.
- 4 Stir anchovy paste, parsley, and capers into the green butter.
- 5 Chill slightly and spread onto bread to make sandwiches.
