Spinach Anchovy Butter Sandwiches

Ingredients

  • ¼ lb butter
  • 1/8 peck spinach
  • 2 tbsp finely chopped parsley
  • 6 anchovies
  • 2 tsp finely chopped capers

Method

  1. 1 Boil spinach, drain thoroughly, and press through a muslin cloth to extract pulp.
  2. 2 Beat butter until creamy, then mix in enough spinach pulp to achieve a green tint.
  3. 3 Wipe anchovies, remove bones, and pass through a fine sieve.
  4. 4 Stir anchovy paste, parsley, and capers into the green butter.
  5. 5 Chill slightly and spread onto bread to make sandwiches.
