Spicy Tomato Macaroni With Salt Pork
Ingredients
- 1 large can tomatoes
- ½ pound salt pork
- 1 large onion
- salt
- cayenne pepper
- cooked macaroni
- grated cheese
Method
- 1 Rub tomatoes through a fine sieve and simmer for 3 hours until thick as jelly.
- 2 Chop salt pork and onion fine, then fry until brown and crisp.
- 3 Mix fried pork and onion with the thickened tomatoes and season with salt and cayenne.
- 4 Pour the sauce over cooked macaroni and serve with grated cheese.
