Spicy Tomato Macaroni With Salt Pork

  • 1 large can tomatoes
  • ½ pound salt pork
  • 1 large onion
  • salt
  • cayenne pepper
  • cooked macaroni
  • grated cheese

Method

  1. 1 Rub tomatoes through a fine sieve and simmer for 3 hours until thick as jelly.
  2. 2 Chop salt pork and onion fine, then fry until brown and crisp.
  3. 3 Mix fried pork and onion with the thickened tomatoes and season with salt and cayenne.
  4. 4 Pour the sauce over cooked macaroni and serve with grated cheese.
