Spicy Potato Black Bean Skillet

Ingredients

  • 2 1/2 cups red potatoes, diced
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 cup chopped onion
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 can (15 oz.) black beans, drained and rinsed
  • 6 oz. kale, chopped
  • 1/2 cup nonfat plain Greek yogurt

Method

  1. 1 Dice potatoes into 1/4-inch pieces and chop the kale.
  2. 2 Heat olive oil in a large skillet over medium heat. Add garlic and onions; cook for 2 to 3 minutes until starting to brown.
  3. 3 Add diced potatoes, chili powder, salt, and cayenne to the skillet. Cover and cook for 8 to 10 minutes, stirring occasionally.
  4. 4 Stir in the chopped kale and black beans. Cook for 3 to 5 more minutes, stirring gently, until heated through.
  5. 5 Serve topped with a dollop of Greek yogurt.
