Spicy Potato Black Bean Skillet
Ingredients
- 2 1/2 cups red potatoes, diced
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/4 cup chopped onion
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1 can (15 oz.) black beans, drained and rinsed
- 6 oz. kale, chopped
- 1/2 cup nonfat plain Greek yogurt
Method
- 1 Dice potatoes into 1/4-inch pieces and chop the kale.
- 2 Heat olive oil in a large skillet over medium heat. Add garlic and onions; cook for 2 to 3 minutes until starting to brown.
- 3 Add diced potatoes, chili powder, salt, and cayenne to the skillet. Cover and cook for 8 to 10 minutes, stirring occasionally.
- 4 Stir in the chopped kale and black beans. Cook for 3 to 5 more minutes, stirring gently, until heated through.
- 5 Serve topped with a dollop of Greek yogurt.
