Spicy Pickled Cucumbers With Vinegar And Oil
Ingredients
- cucumbers, full grown but young
- chopped onion
- salt
- cayenne pepper
- strong cold vinegar
- sweet oil
Method
- 1 Peel the cucumbers and slice them thickly.
- 2 Layer cucumbers in a deep dish with chopped onion and salt. Sprinkle salt on top and let stand for six hours.
- 3 Drain the liquid in a colander, then place cucumbers in a pot. Layer with cayenne pepper and cover with strong cold vinegar.
- 4 Pour sweet oil on top, seal tightly, and let sit for two weeks.
- 5 Discard the original vinegar and replace with fresh vinegar.
