Spicy Pickled Cucumbers With Vinegar And Oil

Ingredients

  • cucumbers, full grown but young
  • chopped onion
  • salt
  • cayenne pepper
  • strong cold vinegar
  • sweet oil

Method

  1. 1 Peel the cucumbers and slice them thickly.
  2. 2 Layer cucumbers in a deep dish with chopped onion and salt. Sprinkle salt on top and let stand for six hours.
  3. 3 Drain the liquid in a colander, then place cucumbers in a pot. Layer with cayenne pepper and cover with strong cold vinegar.
  4. 4 Pour sweet oil on top, seal tightly, and let sit for two weeks.
  5. 5 Discard the original vinegar and replace with fresh vinegar.
