Spicy Mustard Olive Oil Mayonnaise
Ingredients
- 1/2 tsp mustard
- 1/2 tsp sugar
- 1 tsp salt
- dash cayenne pepper
- 2 raw egg yolks
- 1 tsp strong vinegar
- 3/4 cup olive oil
- 1/2 tsp vinegar (for thickening)
- lemon juice (optional substitute for vinegar)
Method
- 1 In a bowl, combine mustard, sugar, salt, and cayenne pepper.
- 2 Add egg yolks and beat well. Stir in 1 tsp vinegar.
- 3 Slowly drizzle in olive oil drop by drop, beating constantly until thick.
- 4 Once thickened, stir in the remaining 1/2 tsp vinegar. Adjust seasoning if needed.
