Spicy Kidney Bean and Rice Skillet

Ingredients

  • cooking oil spray, as needed
  • 1 medium onion, peeled and chopped
  • 1 medium green bell pepper, washed, seeded and chopped
  • 1 teaspoon garlic powder
  • 1 can (14.5 ounces) diced tomatoes, low-sodium
  • 6 cans (15.5 oz each) kidney beans, low-sodium, drained and rinsed
  • cooked brown rice

Method

  1. 1 Spray skillet with cooking oil spray. Cook onion and pepper over medium heat for 5 minutes or until tender.
  2. 2 Add garlic powder, tomatoes, and kidney beans to the skillet.
  3. 3 Bring mixture to a boil, then reduce heat to low and simmer for 5 minutes.
  4. 4 Serve the bean mixture over cooked brown rice.
