Spicy Corn And Bean Medley
Ingredients
- 1/4 cup onion, chopped
- 1 cup corn, canned whole-kernel
- 3/4 cup kidney beans, cooked
- 3/4 teaspoon chili powder
- 1/4 teaspoon hot pepper flakes, optional
Method
- 1 Drain the canned corn, reserving the liquid from the can.
- 2 Heat 3 tablespoons of the reserved corn liquid in a saucepan.
- 3 Cook the chopped onion in the liquid until soft, about 2 minutes.
- 4 Add the corn, cooked kidney beans, chili powder, and optional pepper flakes to the onion mixture.
- 5 Cook over low heat for about 10 minutes.
