  • 1/4 cup onion, chopped
  • 1 cup corn, canned whole-kernel
  • 3/4 cup kidney beans, cooked
  • 3/4 teaspoon chili powder
  • 1/4 teaspoon hot pepper flakes, optional

Method

  1. 1 Drain the canned corn, reserving the liquid from the can.
  2. 2 Heat 3 tablespoons of the reserved corn liquid in a saucepan.
  3. 3 Cook the chopped onion in the liquid until soft, about 2 minutes.
  4. 4 Add the corn, cooked kidney beans, chili powder, and optional pepper flakes to the onion mixture.
  5. 5 Cook over low heat for about 10 minutes.
