Spicy Catfish And Cabbage Stew
Ingredients
- 1 medium potato, peeled and quartered
- 1 (14.5 oz) can tomatoes, cut up
- 1 cup chopped onion
- 1 cup clam juice or water
- 2 cups water
- 1/2 teaspoon minced garlic
- 1 pound coarsely chopped cabbage
- 1 1/2 cups catfish fillets, cut into 2-inch lengths
- 1 1/2 tablespoons Chili and Spice Seasoning
- Sliced green onion, for garnish
- Hot cooked white or brown rice, for serving
Method
- 1 Peel the potato and cut it into quarters.
- 2 In a large pot, combine potatoes, tomatoes with juice, onion, clam juice, water, and garlic. Bring to a boil, then reduce heat to medium-low and cook covered for 10 minutes.
- 3 Add the cabbage and return to a boil. Reduce heat and cook covered for 5 minutes, stirring occasionally.
- 4 Cut catfish fillets into 2-inch lengths and coat with the Chili and Spice Seasoning.
- 5 Add the seasoned fish to the vegetables. Reduce heat and simmer covered for 5 minutes or until the fish flakes easily with a fork.
- 6 Serve the stew in soup plates, garnished with sliced green onion. Serve with a scoop of hot cooked rice.
