Spicy Bell Pepper Macaroni And Beans
Ingredients
- 1 garlic clove
- 2 bell peppers (green, red, yellow, or orange)
- 1 tablespoon oil
- 1 can (14-15 ounces) diced tomatoes
- 1/2 can (15.5 ounces) beans (black, kidney, pinto or other), drained and rinsed
- 2 teaspoons crushed red pepper flakes
- 2 cups cooked macaroni (without salt or fat added or other pasta)
Method
- 1 Peel and finely chop the garlic. Core, seed, and finely chop the bell peppers.
- 2 Heat oil in a large skillet over medium-high heat. Add garlic and bell peppers; cook for one minute without browning.
- 3 Add diced tomatoes (undrained) and crushed red pepper flakes. Cover and lower heat.
- 4 Cook for 10 minutes or until the sauce is slightly thickened.
- 5 Add beans and cooked macaroni to the skillet; cook for 5 minutes or until heated through.
- 6 Serve hot.
