Spicy American Cheese Soufflé
Ingredients
- 2 tablespoons butter
- 1 heaping tablespoon flour
- ½ cup milk
- ½ teaspoon salt
- Dash of cayenne
- 3 eggs
- 1 cup grated American or Parmesan cheese
Method
- 1 Melt butter in a saucepan over medium heat. Stir in flour and cook for one minute without browning, stirring constantly.
- 2 Slowly add milk while stirring until smooth. Add salt and cayenne. Remove from heat.
- 3 Stir in beaten egg yolks and grated cheese until melted and smooth. Do not overcook or butter will separate. Cool slightly.
- 4 Lightly fold in well-beaten egg whites. Pour into a buttered pudding dish.
- 5 Bake in a hot oven (425°F) for 20-30 minutes. Do not open or move the oven for at least 15 minutes.
- 6 Serve immediately. Soufflés fall quickly if left out of the oven.
