Spicy American Cheese Soufflé

Ingredients

  • 2 tablespoons butter
  • 1 heaping tablespoon flour
  • ½ cup milk
  • ½ teaspoon salt
  • Dash of cayenne
  • 3 eggs
  • 1 cup grated American or Parmesan cheese

Method

  1. 1 Melt butter in a saucepan over medium heat. Stir in flour and cook for one minute without browning, stirring constantly.
  2. 2 Slowly add milk while stirring until smooth. Add salt and cayenne. Remove from heat.
  3. 3 Stir in beaten egg yolks and grated cheese until melted and smooth. Do not overcook or butter will separate. Cool slightly.
  4. 4 Lightly fold in well-beaten egg whites. Pour into a buttered pudding dish.
  5. 5 Bake in a hot oven (425°F) for 20-30 minutes. Do not open or move the oven for at least 15 minutes.
  6. 6 Serve immediately. Soufflés fall quickly if left out of the oven.
