Spiced Wine Posset

Ingredients

  • 1 quart white wine
  • 1 quart water
  • 1 tsp whole spice blend (cinnamon, nutmeg, etc.)
  • 6 large egg yolks
  • Sugar to taste
  • Ground cinnamon and nutmeg for garnish

Method

  1. 1 Combine wine, water, and whole spices in a pot. Bring to a boil, then remove from heat.
  2. 2 Beat egg yolks thoroughly in a separate bowl.
  3. 3 Slowly pour the hot wine mixture into the eggs while stirring constantly to temper them.
  4. 4 Return the mixture to very low heat, stirring continuously until it thickens slightly.
  5. 5 Sweeten with sugar to taste. Serve warm, sprinkled with ground cinnamon and nutmeg.
