Spiced Wine Posset
Ingredients
- 1 quart white wine
- 1 quart water
- 1 tsp whole spice blend (cinnamon, nutmeg, etc.)
- 6 large egg yolks
- Sugar to taste
- Ground cinnamon and nutmeg for garnish
Method
- 1 Combine wine, water, and whole spices in a pot. Bring to a boil, then remove from heat.
- 2 Beat egg yolks thoroughly in a separate bowl.
- 3 Slowly pour the hot wine mixture into the eggs while stirring constantly to temper them.
- 4 Return the mixture to very low heat, stirring continuously until it thickens slightly.
- 5 Sweeten with sugar to taste. Serve warm, sprinkled with ground cinnamon and nutmeg.
