Spiced White Wine Vinegar Pickled Cucumbers
Ingredients
- 12 small cucumbers
- 3-4 onions, sliced
- Salt
- White wine vinegar
- Mace
- Cloves
- Pepper
Method
- 1 Slice cucumbers and onions into a dish. Strew salt over them, cover, and let stand for 24 hours.
- 2 Remove onions and strain the liquid from the cucumbers. Place cucumbers in a glazed jar.
- 3 Prepare a pickle using white wine vinegar seasoned with mace, cloves, and pepper. Pour boiling hot over cucumbers and seal jar tightly.
- 4 After 4-5 days, remove cucumbers, boil the vinegar, and pour it back over them. Keep jar sealed.
- 5 Repeat the boiling and pouring process three times total. Cover jar with a bladder and leather to store.
